An iconic Mumbai street snack reimagined with a crispy, high-protein tikki and bold chutneys, all tucked into a soft pav.

Ingredients

  • 2 Pav buns, slit
  • 4 protein tikkis (garlic/chilli)
  • 2 tsp Green chutney
  • 2 tsp Sweet tamarind (imli) chutney
  • 2 tsp Garlic chutney (dry or oily)
  • Butter or oil for toasting (optional)
  • 2–4 Green chillies (slit)
  • A pinch of salt or chaat masala
  • Oil for frying chillies

🧑‍🍳INSTRUCTIONS
Shallow Fry the Protein Tikkis
  • Heat a little oil in a pan. Pan-fry the protein tikkis until crisp on both sides. Set aside.
Toast the Pav (Optional)
  • Butter the inside of each pav and toast until warm and slightly crispy.
Fry the Green Chillies
  • Slit green chillies, fry briefly in hot oil till blistered, then sprinkle with salt or chaat masala.
Assemble the Vada Pav
  • Spread green chutney on one side of the pav.
  • Place the hot soya tikki on it.
  • Add a spoon each of garlic chutney and tamarind chutney.
  • Close and press lightly.
Finish Strong:
  • Serve hot with the fried chillies on the side — perfect for a protein-packed snack with bold desi flavours.
